On Cabramatta’s John Street, Phu Quoc delivers brisk dining energy anchored by hands-on, build-your-own rice paper rolls. Expect tight tables and a fast-moving clipboard queue outside. Platters arrive loaded with bouncy sugarcane prawns, grilled lemongrass pork, and baskets of mint and lettuce. Regulars wrap everything at the table—folding crisp greens and sweet prawn meat into rice paper before dipping into fish sauce. The supersized chả giò come rolled in rice paper rather than pastry for an audible crunch, and steaming bowls of beef pho or duck noodle soup keep tables turning late past 8 PM.

- Rice-Paper Chả Giò: Fried in rice paper sheets instead of wheat pastry, yielding an extra-crispy casing around seasoned pork and vegetables.
- DIY Bánh Hỏi Platters: Platters of grilled meats and herbs built for assembling custom rice paper wraps right at the table.

Joseph Mercurio Efficient Clipboard Queue and Brisk Turnover
Despite high dining demand and compact table spacing, an orderly outside clipboard queue and swift kitchen service keep wait times manageable for gatherings.
The wait was probably about 10 minutes outside, and there is a good waiting system outside where you can write your name and number of guests on the list, so you don't have to queue in a long line.
