Slip past the door marked 1960 and pull up a barstool—the crew will build off-menu cocktails on the fly based on your favorite spirit profile or assemble an impromptu flight. Regulars pair unlisted pours with beef tartare and crisp soft shell crab sent straight downstairs from Cash Only Diner, before rounding things out with an espresso martini spiked with Vietnamese coffee.
