Paramount Coffee Project pairs precision-brewed roasts with an inventive, cross-cultural brunch inside Surry Hills' historic Paramount House. Queues form early along Commonwealth Street for a table in the industrial hall—concrete pillars, high ceilings, and high-energy chatter around communal tables. The bar takes coffee extraction seriously, pulling dialed-in flat whites alongside single-origin V60 and batch pours. Out of the kitchen, regulars head straight for the fried chicken atop fluffy waffles with maple syrup, or the savory scallion pancake slicked with chili oil and soft eggs. It all sits alongside a rooftop bakery and cinema, rounded out by a cup of batch brew.
