Paramount Coffee Project pairs precision-brewed roasts with an inventive, cross-cultural brunch inside Surry Hills' historic Paramount House. Queues form early along Commonwealth Street for a table in the industrial hall—concrete pillars, high ceilings, and high-energy chatter around communal tables. The bar takes coffee extraction seriously, pulling dialed-in flat whites alongside single-origin V60 and batch pours. Out of the kitchen, regulars head straight for the fried chicken atop fluffy waffles with maple syrup, or the savory scallion pancake slicked with chili oil and soft eggs. It all sits alongside a rooftop bakery and cinema, rounded out by a cup of batch brew.

    The fried chicken waffle was hands down one of the best I’ve ever had! The fried chicken was so tender and juicy! And the maple syrup sauce that comes with it just pair so well! And the waffle itself was so fluffy and so good!

    The other scallion pancake that we ordered was also such a star on its own! It wasn’t like the typical Taiwanese scallion pancake that you’d expect, it was such a fluffy and wholesome pancake that pairs so well with its fluffy eggs and chili oil on its side!
