Banquets flow without pause—crisp batata harra dipped in garlicky toum, wood-roasted pumpkin, and tender shawarma wrapped in warm bread. Pull up a stool at the open kitchen counter to watch the crew sear scallops in burnt butter and slice twice-cooked duck against the hearth.     And to finish, the woodfired coconut basbousa. One of the only things I actually got a photo of. The warm, caramelised coconut with that fragrant cardamom custard and the cold Jersey milk ice cream melting into it, the contrast of temperatures and textures was incredible. The best dessert I’ve had in Sydney so far.

    On the drinks side, I had the Tamuru Passion, and it was spectacular. I felt a bit awkward, when it was served with a spoon, but I figured it out. Fruity and aromatic with the passionfruit and elderflower, but what really set it apart was the blood orange granita sitting on top, and scooping that frozen little hit of citrus into the cocktail as you go made it feel like a really special experience, not just a regular drink.
