Peter Gilmore’s harbour-front benchmark serves multi-course dégustation menus framed by uninterrupted vistas of the Sydney Opera House and Harbour Bridge. Perched in the Overseas Passenger Terminal, the glass-walled dining room captures the shifting sunset light as daylight dims over the water. Diners charting special milestones gravitate toward the seven-course journey, built around technical depth and Gilmore's hallmark dishes. Rich bone marrow noodles share the stage with buffalo milk custard steeped in a concentrated chicken broth, while Gilmore’s signature snow egg caps the meal. Behind the bar, offerings span crisp martinis to the playful Thinking About Ceviche cocktail, matched by cellar selections designed around the menu.
