Broths here come rich, simple, and unvarnished, with diners having their pick between simmered pork bone or chicken stock bases. When down to the final savory spoonfuls of soup, call for kaedama—a hot refill of noodles dropped straight into the bowl.

The thin noodles were cooked just right, and the broth was full of umami. Toppings included three slices of chashu, half a soft-boiled egg, bamboo shoots, seaweed, black fungus, and spring onions.
