About Solander Dining and Bar

Tucked along Sussex Street, this moody dining room champions Australian botanicals in an art deco setting with live acoustic sets. Velvet seating and dim lighting set an easy, upscale tone away from the usual hotel bustle. The kitchen builds dishes around native bush ingredients—spotlighting charred Moreton Bay bugs in chilli butter, mountain pepper venison rack, and house bread baked with acacia and banksia notes. Diners drop in for happy hour wines and small plates before settling into mains paired with warrigal greens and fermented black garlic.

  • Native Australian Botanicals: Plates spotlight native ingredients like lemon myrtle, warrigal greens, and acacia-baked house bread alongside venison and charred bugs.
  • Live Acoustic Evenings: Friday and weekend dining features live acoustic sets that bring an easy, relaxed rhythm to the lounge bar.
  • Lounge Bar & Happy Hour: Happy hour pours and share plates like cured salmon draw an early crowd into the velvet-lined bar.

  • Shared Bites & Happy Hour Catch-ups

The lounge bar provides a relaxed, convivial setting for friends and colleagues to connect over drink specials and repeatable small bites.

The happy hour wines were very acceptable, so we decided to try some share plates. The cured salmon was superb, so we ordered again and again . . We ended up having four rounds and four share plates, each as good as the last.
