Rather than a rushed slurp-and-dash counter, Gogyo invites long dates over charcoal-blistered edamame, wagyu spring rolls, and craft drinks. The kitchen chars miso and shoyu in smoking woks to produce its trademark kogashi broth—yielding an intensely dark, smoky bowl cut through with savory depth and chewy noodles.

The Wagyu spring rolls are to die for and the Yuzu Margherita was so damn good I could have had three.
