Redfern’s BUSH pairs wild-harvested invasive game with native botanicals in a room lined with raw bush timbers. Diners bypass the à la carte for the degustation—an unpretentious take on bush tucker that lands like dinner at an old friend’s table. The kitchen turns out crisp pastry rolls packed with saltbush and ricotta, seared venison, and wild rabbit. Dessert closes on crisp pavlova dotted with green ants for a sharp citrus pop.
