Air Lab delivers tall, jiggly Japanese soufflé pancakes finished with a crisp, blowtorched crème brûlée crust. Operating strictly as a compact takeaway hatch on John Street, the kitchen whips up each batch to order—leaving crowds to gather on outdoor stone benches with fork in hand. Beyond the torched custards, the counter turns out pandan-and-cheese eggettes alongside crispy choux puffs filled with rich black sesame and sweet taro.
