About Baker Bleu

Double Bay runs on Baker Bleu’s dark viennoiserie and 48-hour fermented loaves. Pastry crowds cross town for croissants baked bien cuit—deeply caramelized without crossing into burnt territory. Regulars zero in on the almond yuzu croissant or have a chewy Village loaf sliced thick right at the counter. Come midday, hearty builds developed with chef Neil Perry fill the sidewalk tables, from mushroom and gochujang melts to generous prawn rolls.

  • Dark-Baked Viennoiserie: Croissants pushed to a deep bake without tasting burnt, alongside pastries like the almond yuzu croissant and vanilla-cream St. Honoré.
  • 48-Hour Fermented Sourdough: Country loaves and Village bread fermented for 48 hours for depth and chew, with custom slicing offered right at the counter.
  • Chef-Curated Sandwiches: Substantial lunch builds featuring chef Neil Perry collaborations, prawn rolls, and mushroom cheddar melts with gochujang.

Before you head over

Practical guidance on navigating ordering counters, morning queues, and seating in Double Bay.

  • Order at Separate Counters

Baker Bleu operates two distinct counters on opposite sides of the shop. Bread, sandwiches, and pastries are handled at the main display, while coffee orders must be placed separately at the espresso station.

  • Beat the Weekend Rush

Expect queues to form quickly after 9:30 AM on weekends. Arrive earlier for the best pastry selection, and note that counter staff can slice your sourdough loaves to your preferred thickness (thin, regular, or thick).

  • Take Away to the Park or Beach

Outdoor seating is very limited, and lines often form directly around the few existing tables. Consider taking your pastries and sandwiches to the benches in the park across the road or down to the nearby Double Bay beach.
