Book NowAbout Pizza Bros
Perched upstairs at the Imperial, this high-heat pizza den turns out blistered pies loaded with maximalist toppings. The move is perching right in front of the gold-tiled woodfire oven, trading banter with the pizzaiolos while truffle hangs in the air. Visiting chefs off-the-clock make detours for the charred leoparding and cross-cultural riffs—think Cacio e Pepe draped in burrata, sweet hot honey over nduja, or Tom Yum prawns with bouncy heat. House chilli cuts through the richness, cold beers flow freely, and orders are happily fired right up to the 10 PM close.
- Creative Wood-Fired Pies: Charred, chewy crusts topped with inventive cross-cultural combinations like Tom Yum prawns, Wagyu mala, and hot honey with nduja.
- High-Energy Open Kitchen: An open kitchen setup wrapped around a gold-tiled woodfire oven where guests can watch dough slung in real time.
- Late-Night Flexibility: Full pizza orders are fired right up until the 10 PM close without early cutoff times.

Why Choose Pizza Bros
Maximalist Neapolitan pies, global fusion toppings, and rooftop pub energy above Erskineville
Artisanal Wood-Fired Neapolitan Dough
Handmade wood-fired dough achieves an intentional balance of blistered leopard char, airy puff, and chewy tenderness that holds up rich toppings.
The dough has a similar leoparding, crust puff and char-kissed flavour to BB but is more delicately balanced between crisp and chew.
Mike Yee Decadent Burrata & Cheesy Finishes
Generous dollops of creamy whole burrata and rich cheeses elevate signature pies like Cacio e Pepe and pepperoni.
We were blown away by the pizzas, especially the one topped with a generous, creamy ball of burrata right in the center.
Lina Meier Bold Cross-Cultural Fusion Flavours
Innovative culinary mashups bring adventurous profiles like spicy mala Wagyu beef, Tom Yum prawn, and hot honey nduja to wood-fired pizza bases.
My favorite was definitely the Wagyu Mala Pizza — the mala peppercorn spice was perfectly balanced, rich, and super flavorful.
Ormorm Sutthirak Open Rooftop Kitchen Energy
Perched upstairs with a gleaming gold-tiled woodfire oven, the open kitchen lets diners watch dough being tossed and pizzas baked in real time.
The atmosphere is fun and lively. The open kitchen is so interesting to observe.
Aayushi Patel Warm Hands-On Brotherly Hospitality
Pizzaiolo brothers Johnny and Joey engage directly with guests at the counter, delivering genuine warmth, hospitality, and recommendations.
The Pizza Bros were super friendly and it was great to chat with them and hear their journey as they were slinging out doughs.
Jorgia Brown Lively Night-Out Atmosphere
High spirits, great music, and cold drinks turn dinner into a vibrant, uplifting evening out rather than an ordinary meal.
Combined with the fun, relaxed vibe and easygoing service, it felt more like a night out than just grabbing dinner.

Hot Honey Pizza
Another flavor we tried was the Hot Honey Pizza. The combination of sweet honey and spicy flavors worked way better than expected. Paired with burrata cheese, it became such a perfect fusion of flavors — absolutely delicious
Ormorm Sutthirak Cacio e Pepe
The Cacio e Pepe came loaded with a generous amount of cheese and truffle, and it was honestly amazing! (rich, creamy, super cheesy, and beautifully balanced with that truffly aroma.)
Lauren Kim Wagyu Mala Pizza
My favorite was definitely the Wagyu Mala Pizza — the mala peppercorn spice was perfectly balanced, rich, and super flavorful. It paired amazingly well with the wagyu beef.
Ormorm Sutthirak Joey Pepperoni
The Joey pepperoni with burrata added was just perfect. Chilli on side just added that extra kick.

Book ahead for weekends
The rooftop restaurant fills up quickly on peak weekends. Reserve a table in advance if visiting Friday through Sunday, or drop by during daytime hours to avoid peak dinner crowds.
Allow time for made-to-order pies
Each pizza is freshly made to order and can take 20 to 25 minutes during peak rushes. Give yourself extra time or chat with the pizzaiolos by the open kitchen while waiting.
Late orders welcomed until 10 pm
Unlike venues with early kitchen cutoffs, orders can still be placed right up until 10 pm closing, making it a reliable option for late-night pizza cravings.
